Persimmons are ready in the late fall, early winter. Often, before harvest, fruits will be hanging like ornaments on the tree.
Astringent fruits are best eaten when jelly-like and overly ripe. Leave your unripe astringents to fully ripen. It’s well worth it!
Non-Astringent fruits, even when picked unripe, are sweet.
